Pork Tenderloin with Cranberry Salsa

Serves 4
Here’s a simple summer dessert that appeals to both kids and adults. In place of waffle cones, you can also assemble this treat in parfait glasses or waffle bowls.

Ingredients:
2 medium nectarines, chopped
1 cup whole small fresh strawberries
1 cup fresh blueberries
2 tablespoons mashed fresh strawberries
1 teaspoon crystallized ginger
¼ teaspoon ground cinnamon
1 cup reduced-fat whipped topping
4 ice-cream waffle cones

Directions:

  1. In a small bowl, combine the nectarines, whole strawberries, and blueberries.

  2. In another bowl, combine the mashed strawberries, ginger, and cinnamon.

  3. Fold in whipped topping.

  4. Fill each waffle cone with ¼ cup fruit mixture; top with 2 tablespoons whipped topping mixture. Repeat layers.

  5. Serve immediately.

Helpful Hint

When kids are looking for a snack, they typically reach for foods that are most convenient and quick. Cut up fruits and veggies into snack-size portions and place them in the fridge where your kids can easily grab them and run. Snack-size disposable baggies work great. You can also place a bowl of fresh fruit on the table or in any high-traffic area for easy access. Fresh fruit is nature’s fast food!
